The Harbourside Drive storefront sits on the Lower Lonsdale waterfront, a short walk from Lonsdale Quay, the SeaBus terminal, and the Saturday farmers' market, and the airy shop next door feels less like a retail counter and more like a quiet pause on the North Shore. Thomas Haas Chocolates has been crafting handmade chocolates and truffles in that part of North Vancouver for years, with each piece pulled from a daily production run and hand selected for the signature gift boxes. Shoppers will find round tins, square sleeves, and multi-tier towers holding anywhere from nine to forty-eight pieces, with sleeve and ribbon colours rotating by season.
The chocolate library runs deep. Bars range from a 37 percent butterscotch "blonde" with fleur de sel and toasted almonds to a 71 percent fleur de sel, a 73 percent crunchy with roasted cocoa nibs, a 79 percent espresso with organic Brazilian beans, an 83 percent bold, and a 97 percent extreme that uses extra cocoa butter to stay smooth. There is also an açai bar, a chai tea bar with Darjeeling and green cardamom, and an Aztec bar spiked with chipotle and ancho. Truffles include milk chocolate ganache with caramel, smooth dark with Tahitian vanilla, Black Forest with cherry pâte de fruit and Kirsch ganache, cassis, cognac rolled in red cocoa powder, and a seasonal "Chocolate of the Moment."
Cake cases line one wall. The Blak Classic layers 69.3 percent dark chocolate almond cake with mousse, the Black Forest tops Kirsch Chantilly and fresh cherry compote on shortbread, the Champagne Truffle stacks three layers of chocolate, almond, and hazelnut cake, and the Chestnut Mont Blanc combines chestnut and cassis with vanilla Bavarian. Award-winning Chocolate Sparkles, gluten-free and built on fine ground almonds and 70 percent dark chocolate, are sold baked or as a bake-at-home kit, and the pastry case also turns out butter croissants, brioche, and bacon leek cheddar savouries. Holiday traditions include Christmas stollen with rum-soaked raisins and hand-decorated bunnies, Santas, Jack-o-lanterns, and lollipops.
